    The sauce chien is certainly the sauce that most refers to Martinique. It is a local must eat and it is very often requested by tourists visiting the island. It is a sauce that accompanies grilled meats, fish and shellfish, in particular fish such as snapper or lobsters. It owes its name not to the domestic animal (chien means dog in English) but to the fact that the ingredients were finely cut using a knife from the French brand Chien. It is possible to prepare it with or without tomato.

Ingredients

For 5 servings:

  • 3 chives
  • 3 shallots
  • 2 cloves garlic
  • 1 vegetarian pepper
  • 2 sprigs of parsley
  • 2 limes
  • 5 tablespoons of sunflower oil
  • 1 teaspoon of vinegar
  • Salt
  • Pepper
Preparation
  1. Take the chili and cut it into small cubes, taking care to remove the seeds.
  2. Cut the shallots into small cubes.
  3. Peel the garlic cloves and squeeze them.
  4. Chop the parsley.
  5. Squeeze the lemons in a bowl to remove their juice.
  6. In a bowl add the shallots then add the pressed garlic.
  7. Add the chilli, parsley, chopped chives and lemon juice.
  8. Add the vinegar and two tablespoons of water.
  9. Pour in the oil while whisking the mixture.
  10. Add salt and pepper.
